We marinate roasted beetroot with orange zest and juice and dress with Puy lentils and mint vinagrette. This is served with candy beets, yellow beet crisps, orange and grapefruit slices. We then drizzle on our homemade coconut yogurt and dill dressing and sprinkle with pistachios.
