We use broad beans, parsley and mint to make our fritters, to give a fresh green taste. This is served with a preserved lemon and herb spiked taboule made with toasted buckwheat. We complete the dish with yogurt and zoug- a frisky sauce of garlic, olive oil and fresh coriander, crushed with lots of whole spices.

Buckwheat, Broad bean fritters (Pinto Beans, Broad Beans, Onion, Chestnuts (Nuts), Spring Onion, Blended Vegetable Oil, Parsley, Mint, Coriander Leaves, Lemon Juice, Tahini (Sesame), Za’atah (Sesame Seeds, Black Sesame Seeds (Sesame), Fennel Seeds, Coriander Seeds, Salt, Black Pepper, Marjoram), Salt, Garlic, Black Pepper, Lemon Peel), Broad Beans, Red Radish, Tomatoes, Yogurt (Milk), Zoug (Coriander Leaves, Olive Oil, Garlic, Salt, Ground Cumin, Black Pepper), Lemon Dressing (Olive Oil, Lemon Juice, Salt, Black Pepper), Spring Onion, Preserved Lemons (Lemon Peel, Salt), Parsley, Coriander Leaves, Mint, Red Chilli, Green Chilli, Nigella Seeds.

Preparation

Heating instructions: Microwave: Remove the yogurt and zoug pot, and heat the fritters and taboule for 2 minutes. Oven: Remove the yoghurt and zoug pot, and heat the fritters and taboule in an oven proof dish for 8 minutes at 180°C. To Assemble: Drizzle the fritters with yogurt and zoug and serve with the taboule.
