We use broad beans, parsley and mint to make our fritters, to give a fresh green taste. This is served with a preserved lemon and herb spiked taboule made with toasted buckwheat. We complete the dish with yogurt and zoug- a frisky sauce of garlic, olive oil and fresh coriander, crushed with lots of whole spices.
