Tom is a Michelin star trained chef with 13 years of experience. For the past four years he has worked as head chef for a number of restaurants.
He got a real taste for cooking after landing a job in Cornwall working for Rick Stein & later for Nathan Outlaw, whose Marina Villa Hotel restaurant, Rising, earned two Michelin stars. He moved to London and continued to work for top flight restaurants Maze & Nobu.
He worked for Yotam Ottolenghi's flagship restaurant in Islington. As the head chef of the dinner service, he took Ottolenghi from 60 covers a night on weekends to 110 covers on average every night. Instead of dishes simply lifted from the Ottolenghi Cookbook, he devised complicated tapas-style dishes which took the restaurant to the next level.
He also transformed another restaurant, Inn The Park (Peyton and Byrne group). He recently helped launch a Peruvian restaurant Pachamama on Thayer street, which has had some excellent reviews in Time Out and The Evening standard.
In terms of style, he tends to mix his Thai origin and experience at restaurants such as Nobu with British ingredients and classic techniques, resulting in unique dishes and ideas.
